foodie friday -spicy black bean burgers

so i’ve been following SO many new blogs, if it has to do with food or running, i’m all over it!

during one of my surfing sessions i came across eat,live,run. i’m still new to the site, but there are tons of healthy food recipes and the “boyfriend approved spicy black bean” won my interest right away.

i LOVE Morning Star spicy black bean burgers and had been looking for a recipe to make my own for a while, so when i saw this simple, but delicious looking post, i added it to the must do list and decided to attempt it the next night. For detailed step by step instructions check out the blog post here. below you’ll find my wham-bam-thank you-m’am process. the only thing is, i could not find flaxseed flower so they didn’t hold together that well, but were super yummy just the same. side note, i had enough mixture to put in the fridge overnight which help the burgers to set a lil bit better.

it’s such an easy recipe and full of flavor that i plan on adding it into the weekly/bi-weekly rotation. thanks Eat, Live, Run!

stuff you’ll need:

2 cans black beans, drained and rinsed

1 T ground flax + 3 T water (i couldn’t find it)

1 jalapeno

2 cloves garlic

2 T tomato sauce

1/2 cup Panko breadcrumbs

2 tsp cumin

1 1/4 tsp salt

1/2 cup corn (i used frozen)

avocado for topping

olive oil (or canola oil)

    • Thank you! It was SO good, and super easy! The ketchup/sriracha mix suggested as a topping has the perfect sweet/spicy combo for this burger! I’m also a huge fan of black beans.
